Ingredients

  • 1 lb boneless skinless chicken breast, sliced
  • 2 cups broccoli florets
  • 2 2 bell peppers, sliced
  • 1 whole large carrot, thinly sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 1 tbsp cooking oil
  • 1/4 cup water

Instructions

  • Slice the chicken into thin strips and pat dry.

  • In a small bowl whisk together soy sauce, honey, cornstarch, sesame oil, and water.

  • Heat oil in a large skillet or wok over medium-high heat.

  • Cook chicken for 4–5 minutes until browned and cooked through. Remove and set aside.

  • Add broccoli, peppers, carrots, and snap peas to the pan. Stir fry for 3–4 minutes.

  • Add garlic and ginger and cook for 30 seconds.
    3 cloves garlic, minced, 1 tsp fresh ginger, grated
  • Return chicken to the pan and pour in the sauce.

  • Stir continuously until sauce thickens, about 1–2 minutes.
  • Serve immediately over rice or noodles.
