Ingredients

  • 1.5 lbs sirloin steak cut into 1-inch cubes
  • 1.5 lbs baby Yukon gold potatoes halved
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 5 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley chopped

Instructions

  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Add potatoes cut-side down in a single layer. Cook for 10–12 minutes, flipping occasionally, until golden brown and fork-tender. Remove and set aside.

  • Increase heat to medium-high and add remaining oil. Add steak in a single layer, making sure not to overcrowd the pan. Sear for 2–3 minutes per side until browned. Remove from skillet and set aside.

  • Reduce heat to medium. Add butter and minced garlic. Cook for 30–60 seconds until fragrant.

  • Return steak and potatoes to the skillet. Toss well to coat in the garlic butter.
