Heat 1 tablespoon olive oil in a large skillet over medium heat. Add potatoes cut-side down in a single layer. Cook for 10–12 minutes, flipping occasionally, until golden brown and fork-tender. Remove and set aside.
2 tbsp olive oil, 1.5 lbs baby Yukon gold potatoes
Increase heat to medium-high and add remaining oil. Add steak in a single layer, making sure not to overcrowd the pan. Sear for 2–3 minutes per side until browned. Remove from skillet and set aside.
2 tbsp olive oil, 1.5 lbs sirloin steak
Reduce heat to medium. Add butter and minced garlic. Cook for 30–60 seconds until fragrant.

Return steak and potatoes to the skillet. Toss well to coat in the garlic butter.

Add salt, pepper, paprika, and Italian seasoning. Toss to combine and cook for 1–2 minutes. Garnish with fresh parsley and serve immediately.
