  • 2 15 oz Cans Cannellini beans - 15 oz Cans
  • 1 tbsp Olive oil
  • 1 small Yellow onion
  • 4 cloves Garlic
  • 1/2 cup Sun-dried tomatoes
  • 1 cup Vegetable broth
  • 1 cup Unsweetened plant-based milk
  • 1 tbsp Nutritional yeast Optional
  • 1 tsp Italian seasoning
  • 1/2 tsp Oregano
  • 1/2 tsp Thyme
  • 1/4 tsp Crushed red pepper flakes Optional
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper
  • 4 cups Baby spinach 4-Packed cups
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh parsley or basil

Instructions

  • Drain and rinse both cans of white beans. Set aside about ½ cup if you'd like to mash some later for an extra-creamy sauce.

  • Heat olive oil in a large skillet over medium heat. Add onion and sauté 3–4 minutes until softened.

  • Add garlic and sun-dried tomatoes. Cook 30–60 seconds until fragrant.

  • Stir in Italian seasoning, oregano, thyme, red pepper flakes, salt, and black pepper. Cook about 30 seconds.

  • Pour in vegetable broth and plant-based milk. Stir in nutritional yeast if using and bring to a gentle simmer.

  • Add white beans and simmer uncovered for 5–7 minutes. For a creamier sauce, lightly mash about ½ cup of the beans and stir them back into the skillet.

  • Add spinach gradually and cook 2–3 minutes until wilted.

  • Remove from heat. Stir in lemon juice and fresh parsley or basil.

Notes

Use only unsweetened, unflavored plant-based milk. If the sauce becomes too thick, add a splash of vegetable broth. If it seems too thin, simmer uncovered for another few minutes or mash additional beans into the sauce.
