  • 1 Wooden Spoon or Silicone Spatula
  • 1 Colander (for draining pasta)

  • 1 Measuring Cups and Spoons

Ingredients

  • 12 oz pasta (penne/rotini/fettuccine)
  • 1 lb chicken breast (cut into bite-size pieces)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4-6 garlic cloves (minced)
  • 1 1/2 cups heavy cream (or half-and-half)
  • 3/4 cup grated parmesan
  • 1/2 rbsp salt (put to taste)
  • 1/2 tbsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 cup pasta water (reserved)
  • Optional: spinach, parsley, red pepper flakes (put to tastse)

Instructions

  • Cook pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.

  • Season chicken with salt, pepper, and Italian seasoning.

  • Heat olive oil in a large skillet. Cook chicken 5–7 minutes until browned and cooked through. Remove to a plate.

  • Melt butter in the same skillet. Add garlic and cook 30 seconds until fragrant.
  • Pour in cream and simmer 2–3 minutes. Stir in parmesan until smooth.

  • Add pasta and chicken back to the skillet. Toss to coat. Add reserved pasta water a little at a time until creamy

  • Taste and adjust seasoning. Serve warm. Optional: garnish with parsley and extra parmesan

Notes

Use freshly grated parmesan for the smoothest sauce. Reserve some pasta water to thin the sauce if needed. Chicken thighs can be substituted for chicken breasts.
Add spinach or broccoli for extra vegetables.
